Vegetable Stew



Carrot – 1 nr (Medium size)

Green peas, fresh – 1 tbsp

Potato – 1nr (Medium size)

Cauliflower – 8 florets

Beans – 3 nrs

Green chilli, slitted – 3nrs

Onion, sliced – ½ nr

Coconut Milk, second extraction – 500ml

Salt to taste

Maida (Refined flour) – 1 tsp

Curryleaf – a few

Peppercorns – ½ tsp

Method of Preparation

  1. Boil the vegetables.

2.  Heat oil in a kadai, add peppercorns and bayleaf. Add onion, sauté it till translucent. Add green chilli and curry leaf, fry it. Put maida and stir it well. Add little water and boil it slightly

3.  Add the boiled vegetables, mix it. Add coconut milk and salt. Simmer till it heat. Put some coconut oil on top and take it out from heat.

4. This vegetable Stew goes well with Appam.
